Yummy ricotta and strawberry muffins:
Cubes of ricotta push into the muffin mixture.
Frozen strawberries, sliced, then dusted with a little icing sugar
( this helps them to not sink to the bottom of the pan).
Up they rose.
I left them in the baking pan so they would keep warm until the kids arrived home.
Dusted with a little icing sugar and served with hot chocolate.
